Is the pulp from juicing good for you?
The leftover pulp from juicing contains the insoluble fiber aka roughage from the vegetables and fruits you’ve juiced. So yes I would have to say that the pulp from juicing is good for you. The additional fiber is especially beneficial if you suffer from constipation.
Green Juice Pulp Muffins
- If you plan on using the leftover pulp from your green juice to make these Green Juice Pulp Muffins you will need to remove the seeds from your apples prior to juicing!
- These Green Juice Pulp Muffins are quite moist so I recommend that your store them in the fridge.
Green Juice Pulp Muffins
Ingredients
- 1½ cups gluten free oat flour
- 1 cup leftover green juice pulp
- ¾ cup maple syrup or honey
- ¼ cup extra virgin extra olive oil
- 4 tablespoons pumpkin seed butter or other nut butter
- 4 tablespoons desiccated coconut
- 1 teaspoon apple cider vinegar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Instructions
- Pre-heat oven to 190C / 375F
- Combine all ingredients in a large bowl.
- Portion out the batter into a muffin tin lined with silicone muffin cups.
- Bake for 35 minutes.
- Remove from oven and allow to cool.
Loved this! I skipped sugar and they kind of came out like eggless quiche? So yummy.

These muffins are excellent!! I love them with my juice. And a great way to not waste all that pulp! The pumpkin seed butter taste so delicious in the muffins. I added pecans for an extra bite and poured some whole oats on top of the oat flour for extra texture. Great muffins!

I really enjoyed these muffins. I did not have all the ingredients so I substituted. I used organic peanut butter. I substituted desicated coconut for coconut flour. I made my own oat flour out of steel cut oatmeal mixed in my Vitamix. I used raw honey. I used balsamic vinegar in place of the apple cider vinegar. My green pulp was from celery only. I was going to add some dried cranberries but I forgot about them. These muffins still turned out good. Thank you for the recipe.

So what happens if I didn’t remove the apple seeds before I juiced? Should I not use my pulp for muffin and trash the pulp? Whoops!
