Homemade almond milk holds a special place in my heart. It is the very first nut milk I ever made. There is something special about making your food from scratch. I think it comes from the sheer satisfaction of being able to control the quality of the end product and knowing exactly what we put into our bodies.

I know that many do not have the time to make everything from scratch, heck I take shortcuts here and there too. But making your own nut milk is just one of those things you have to try if you have a few extra minutes. In my opinion it’s really quite simple and absolutely worth that extra bit of effort.
How to make homemade almond milk
The first step is to soak almonds in water overnight
Once you have soaked your almonds overnight you’ll want to go ahead and rinse the soaked almonds a few times to remove any of the anti-nutrients and enzyme inhibitors.
Add fresh water, soaked almonds and any other optional flavourings you might like to your blender and blend for a couple of minutes on high
Pour the mixture into a nut milk bag over a large bowl
Squeeze the milk out aka milking almonds
Pour your fresh milk into a glass jar and store it in the fridge.

How long do you soak almonds to make homemade almond milk?
Almonds should be soaked overnight or up to 12 hours with a pinch of sea salt. Then they get nice and plump and release some of their enzyme inhibitors. You can read why soaking is an important step here. In a pinch almonds can be soaked for 2 hours in boiling water.
How long does homemade almond milk last?
Homemade almond milk should be stored in the refrigerator where it will keep for at least 5 to 7 days. I have found that by adding ingredients such as dates, vanilla extract and other flavour enhancers you decrease the shelf life.
How do you know if homemade almond milk has gone bad?
Smell your homemade almond milk to determine if it has gone bad. If it smells off or the colour has changed drastically then it’s best to toss it.
How to thicken homemade almond milk and stop it from separating?
Homemade almond milk will separate over time as it does not contain any binders. If you wish to thicken your homemade milk and stop it from separating blend in 1/2 teaspoon of xanthan gum or arrowroot starch. I personally don’t mind shaking my milk before using but I have tried this and it works. The milk gets thick and even creamier and does not separate.

Homemade Almond Milk
Ingredients
- 1 cup raw almonds
- 4 cups of purified water
- Optional flavourings: cinnamon vanilla extract, dates
Instructions
- Place the raw almonds in a bowl or jar and cover them with water. Let them soak overnight or 6-8 hours minimum.
- When you’re ready to make the milk drain the water off and rinse the almonds well.
- Combine fresh water and soaked almonds in a blender and blend on high speed until smooth.
- For a silky smooth almond milk, strain the mixture using a nut milk bag or cloth strainer.
How to strain homemade almond milk
- Hold your nut milk bag or strainer of choice over a large bowl.
- Pour the mixture from your blender into your strainer.
- Squeeze the bag until all the milk has filtered through and only the pulp is left.
- Pour your milk into a glass storage container. It will keep for about 5 to 7 days in the refrigerator.
- Save the pulp in ice-cube trays for adding to smoothies or dehydrate it to make almond flour.

Hi Alanna from the 3 cups of water you get about 2 1/2 to 2 3/4 cups of milk. You don’t lose much at all. The next time I make it I will measure it out for you. Depending on where you live you might be able to buy almonds in bulk. The biggest advantage of homemade over store-bought for me is that I can control the quality of the nut milk.
