Quick and Easy Garlic Shrimp
My husband is not a seafood fan. He comes from a great meat-eating landlocked nation so I don’t blame him really. On the other hand, my daughter and I can’t get enough of the stuff so whenever he goes away on business I take the opportunity to cook seafood. When the cat’s away the mice will play right 😉 Since moving to Spain we have been overwhelmed with seafood options.
At the fishmongers’ in our neighbourhood supermarket you can find a plethora of fresh seafood for sale. There is always a fish of the day which has been caught from the port. To be honest I don’t even know the names of half the fish and seafood and I haven’t been very adventurous. I just stick to shrimp.
I’ve served this easy garlic shrimp as an appetizer but my favourite way to have it is with King Soba gluten free noodles and extra raw garlic on top. Yumm!
At first glance these noodles may seem a tad pricey but they are 100% organic, gluten-free, egg-free, non GMO and contain no preservatives nor artificial flavours/colours. Definitely worth the few extra euros to me. Having said that a few weeks ago they were on special at my supermarket so I picked up about 10 packets! You would not have liked to see the look on my hubby’s face when I got home with a bag full of noodles, ha! There are some really unique combo flavours like sweet potato and buckwheat, black rice, brown rice and wakame but my absolute favourite so far is the pumpkin, ginger and brown rice noodles. They complement these garlic shrimp wonderfully.

Quick and Easy Garlic Shrimp
Ingredients
- 1 pound raw shrimp peeled & deveined
- 3 garlic cloves minced
- 2 tablespoons coconut oil
- ½ teaspoon grated ginger
- ½ teaspoon of smoked paprika
- ¼ teaspoon of red pepper flakes to garnish
- juice of 1 lime
- salt and pepper to taste
Instructions
- In a large bowl combine all ingredients except coconut oil. Toss until well coated.
- In a large skillet heat coconut oil over medium heat. Add shrimp to the skillet and cook for about 3-4 minutes. The shrimp is done when it begins to look slightly pink and opaque.
