These Smoked Salmon Rice Paper Rolls are a delicious heart healthy dish. They’re amazingly versatile and can be served as an appetiser, light dinner or lunch.
October is National Seafood Month! This month my family and I will eat fish and seafood at least 4 times per week. It’s not that difficult, just 4 meals out of 21! Salmon holds a very special place in my heart and my palate 😉 I am a self taught cook and salmon is the very first fish I ever cooked. Its super simple to work with and the taste is amazing. Salmon is also one of the healthiest foods on the planet. It has one of the highest amounts of Omega-3 fatty acids per serving and tons of additional vitamins and minerals as well.
Take The Healthy Heart Pledge
If you struggle to get more seafood on the table I invite you to take the Healthy Heart Pledge That means you recognize seafood is a healthy choice for you and your family and you’ll pledge to eat at least two servings of seafood each week and supplement with omega-3s. It’s simple to commit. You can Like Seafood Nutrition Partnership on Facebook, tweet using #HealthyHeartPledge to show you’re on board or sign-up using the link. To make the challenge even more fun the folks over at the Seafood Nutrition Partnership are hosting the Seafood Nutrition Partnership 2016 Recipe Sweepstakes until October 21st. All you need to do is show how simple, delicious and nutritious seafood can be for a chance to win. Share a photo of a seafood recipe with 5 or less ingredients on Twitter or Instagram with the hashtags #SNPSweepstakes and #HealthyHeartPledge. A total of ten winners will be randomly selected in accordance with the Sweepstakes Schedule to win a $250 gift card. You can even submit one entry per day. Winners will be announced at SeafoodNutrition.org and on Instagram and Twitter.
This wonderful smoked salmon spring roll was inspired by an appetiser at my favourite restaurant. Everytime I eat there I order the salmon rolls. I figured it couldn’t be that difficult to put together and decided to re-create them at home.
Easy Smoked Salmon Rice Paper Rolls Ingredients
This recipe is so simple, I basically used food items I already had in my fridge. Carrots, avocado and cucumbers are staples in my kitchen and probably in yours too. Any combination of veggies can be used but I suggest going for sturdier types. I think it’s because the rice paper rolls themselves are so soft you need the crunch from the vegetables. Bell peppers and celery would also be nice in these. The addition of some herbs like cilantro takes the flavour of these rolls over the edge. You can usually find cilantro at Caribbean or Latin supermarkets.
Rice Paper Rolls also known as Vietnamese spring rolls, salad rolls, or summer rolls are basically the uncooked version of (fried) spring rolls. You should be able to find rice paper wrappers at most major grocery stores. They might be called spring roll wrappers or rice pancakes. The rice paper wrappers are a little finicky to work with I must admit but by the 2nd and 3rd wrapper I had a system going.
Smoked Salmon Rice Paper Rolls Mise en Place
It is of utmost importance that you assemble your ingredients (mise en place) With everything in its place your job becomes a whole lot easier. The vegetables should be thinly sliced or julienned, rice paper wrappers removed from the packaging and smoked salmon placed on a bowl or plate ready to go.
Follow the instructions on the package for the rice wrappers but if it isn’t mentioned do not ‘overcook’ the wrappers. They will tear and stick and become impossible to handle. Your working surface is also important. I tried placing the wrappers directly on my bamboo cutting board but that didn’t work well. Rather place a dampened kitchen towel on a clean surface and get to work.
Place your ingredients in the middle of the wrapper and wrap and fold over the sides. You can also place them in the bottom third and roll it up like a burrito. The amount of filling you use really depends on the size of your wrapper. At the beginning I overstuffed a couple and they tore. After that I became cautious and think I underfilled them. So it really just takes some practice.
So what do you think? Will you try to incorporate more seafood into your diet?
