Want to know the secret to delicious Caribbean food? It’s in the marinade! Trinidad green seasoning is a staple meat marinade in Caribbean dishes. Use it to season your meats, scrambled eggs, tofu and more.
What is green seasoning?
Trinidad green seasoning is a marinade of predominantly green vegetables. It is typically used as a marinade for adding flavour to meats.
Caribbean Green Seasoning Ingredients
From island to island and home to home green seasoning ingredients differ. The Trinidad style green seasoning recipe I’m going to share has been handed down from my mom and it’s very versatile.
For example the one ingredient that most Trinis would agree is a MUST for green seasoning is shado beni. Unfortunately, I have not been able to find shadow beni (culantro) here in Spain so my version of Trinidad Green Seasoning is made with cilantro. Cilantro’s flavor is like a mild version of culantro and both herbs can be used interchangeably for this recipe.
Typical green seasoning ingredients include:
- parsley
- cilantro
- green onions
- yellow onions
- garlic
- bell peppers
- hot peppers
- ginger

How to make Trinidad Green Seasoning
Trini Green Seasoning in two steps
- Prep ingredients
Wash and roughly chop all ingredients.
- Process into a puree
Place all ingredients in a blender or food processor and puree. You may need to add a tiny amount of water if using a blender.
- Store
Place in a glass jar with a tight-fitting lid and store in the refrigerator. Will keep for 1 to 2 weeks.
How to use Trini green seasoning

If you follow me on Instagram then you already know that I gave birth. My little girl was born a couple of weeks early on Jan 19th. We’re both healthy and the whole family is totally in love.
Life has however become, to say the least hectic. Luckily my mom came to my rescue! She made a huge batch of green seasoning and has been whipping up all of my favorite Trinidadian dishes like:
- jerk chicken
- curry chicken & roti
- callalo
- stew chicken
- dhal

Trinidad Green Seasoning
Ingredients
- juice of 1 lemon
- 1 small onion
- 1 head garlic
- 1 bunch cilantro or shado beni aka culantro
- ½ bunch parsley
- 1 bunch green onions
- small piece of ginger
You may also add
- thyme
- celery
- sweet peppers
- hot peppers
Instructions
- Wash and roughly chop all ingredients.
- Place all ingredients in a blender or food processor and puree. You may need to add a tiny amount of water if using a blender.
- Place in a glass jar with a tight-fitting lid and store in the refrigerator.
- Will keep for 1 to 2 weeks.

how much of the green seasoning you use t marinade 1 lbs of chicken?
This is personal preference but 3 to 4 tablespoons should suffice 🙂
Hi Krystal Thanks for the recipe!! Just one thought culantro is Mexican coriander. It is the plant cousin of cilantro or coriander. They are completely different in shape and there’s a difference in flavor too, but you can substitute with cilantro if you cannot obtain culantro
